There have been tons of remixes made from video game music in the past, and with providing sites like
Overclocked Remix (http://remix.overclocked.org/index.php) and VGMix (http://www.vgmix.com), it's all really easy to download and listen to. I think it's one of the great things about the VGM world. So many great remixes have been made. But not ALL of them are good, of course, so what are your favorites? Try to include the artist, the title, and what game the remix came from.
I'll post my list later =p

FFVIII Fithos Lusec Wecos Vinosec - Man With the Machine Gun - Orchestral arrangements and remixes are some of my favorite songs, so this great arrangement of an already incredible battle theme naturally ranks very high. - Originally from FFVIII
Star Ocean 2 Arrange - Integral Body and Imperfect Soul - For once, a techno remix actually manages to do its original justice by adding more depth to the song instead of taking it away due to the genre difference between it and the original. -Originally from Star Ocean 2
FFV Dear Friends - Intention of the Earth - This remix manages to bring out a lot of beauty and enchantment that wasn't in the original through the much better instrumentation and sound quality. - Originally from FFV
Dracula Battle 1 Perfect Selection - Bloody Tears - I just listened to this yesterday and the hard rock remix takes everything great about the original and adds an incredible electric guiatar melody and solos. As the album says, it is perfection. - Orignally from Super Castlevania 4
REBUS: OST + Classical Arrange - 2 - 07 - Dance of Words - Though I don't have many classic guitar songs, this classical remix of a great song from the OST CD is by far one of my favorite arrangements ever. That it was performed by an orchestra along with every other song on the second CD makes it even better. - Orignally from REBUS (a.k.a. Kartia)
StarCraft Game Music Volume 1 - 10 - For Adun - This song is easily one of the best metal VGM remixes I've heard. - Originally from StarCraft, though it sounds nothing like it.
Rockman X (Alpha Lyra) - 06 - Get Through the Dark - Simply one of the best jazz arrangements of one of my favorite songs from Megaman X. - Originally from Megaman X
Guilty Gear XX - A Solitude That Asks for Nothing In Return - This OST remix takes everything I enjoyed about the original and improves upon it with the harpsichord and strings taking a much more prominent role in the song. - Orignally from Guilty Gear X
Grandia 2 (Sampler CD) - A Deus (SUNKING MIX) - Though I hate the rap part in it, everything else is amazing in it. The brass horns, electric guitars, and powerful singing of the original all come together to make this one remix that can't be missed. - Orignally from Grandia 2

Geez, pick a few hundred more while you're at it! ;) Right now I'm grooving on the classical versions Pretzel has at his site (by the way, have you noticed that his reviews are really pissy and pedantic sometimes? I'm not a big fan of his personal mixes, either). Having busted on him, I must say his site is phenomenal and the selection/variety there is breathtaking!
Oh, another GREAT remix: the Pac-Man mix by Powerpill (AKA Aphex Twin). Old School Rave-ish but killer just the same.
I will include a few that I have recently fell in love with, I am sure there are more....
Terra in Black from FF6 - Probably one of my all time favorites
DKC_Ambient_Gemini_OC_ReMix - Nice and Ambient ;)
Terranigma_Blue_OC_ReMix - This one is addicting to listen to
Xenogears_7YearsBroken_OC_ReMix - I give him mad credit for attempting vocals. Pretty good job too...
Zelda_64_Pachelbels_Ganon_OC_ReMix - Nicely done!
And does Aeris' version of Xenogears count? Its ocapella, and owns me ;)

If you're only talking "Dance" or "Techno" remixes, count me out of the fun, I generally hate this music style.
There have been some cool Jazz and Rock arrangements on OverClocked (among other hilarious things, like the Bubble Bobble Country Arrange) I like very much.
I can't remember anything in particular other than that Bubble Bobble Country. It was hilarious, with an underlayed Hillbilly-style voice. If you can get it, try it out.

Well, as far as I'm concerned, I abhor those "Dance" or "Techno" remixes most of the time, so I'm fine with listening to the composer remix his or her own songs . . . like Sakuraba. All I've heard other people do is maim the originals with thier techno remixes. If their techno were as good as the music from Front Mission 3 or Einhander I might be more interested in fan based remixes.

Yes that's it. Most just don't have the skill to do good remixes in Techno or Dance. Sakurabas "Remixes" (actually, they are rather arrangements!) are of pure genious. Just listen to "Force of Light" (Arranged Album Solo Project for Shining Force music) - Genius, I tell you!

PMM Silver - Within the Giant, Coast of the Sun (minus the talking), Cayenne, Anxious Heart, Forever Rachel, Man With the Machine Gun.
After hearing that I'm certainly going to support KFSS and PMM whenever I can. Now I have to get that tribute to Mitsuda (they just better include some Legaia Duel Saga and Shadow Hearts songs in it.)

I haven't listened to many fan-remixes, mainly because the ones I started out listening to (poorly done MIDIs) weren't very good, but when I started going out of my way to download MP3s on my wonderful 56k modem, I found a new hobby in listening to VG mixes. The best I've heard so far:
Virt - Super Metroid Megamix
I didn't like Super Metroid's soundtrack very much, but this song brings the best parts of it to life in one amazing arrangement. Really upped my respect for both the music and the game.
Virt - What a Horrible Night
An obvious fan of Castlevania 2's underrated and short soundtrack, I liked this one from the moment I heard it. Especially the authentic sounds of the text message toward the middle before the mix breaks from "The Silence of Daylight" into "Monster Dance"
Alexander Prievert - Bloody Tears Inspired
This one's hard to put into words. A remix of the original Bloody Tears from Castlevania 2 with its own melody and style. It's pretty unlike any remix I've ever heard, and the kind you have to hear to believe.
I'm downloading more fan mixes as I type this ;)
As for the official stuff I think deserves special mention ;):
Star Ocean 2 Arranged - Theme of RENA
Not only is it a perfect upgrade of the original (which had pretty bad sound quality compared to the rest of the OST), this also includes "The Venerable Forest" and the music box version of Rena's Theme, merging all three versions of Rena's theme into a single mix. Perfectly arranged and executed.
Xenogears Creid - Balto
One of my favorite songs of the Xenogears OST was "Bonds of Sea and Fire", also referred to as Bart's Theme (which probably explains the title Balto, which could be a mistranslation based on 'Barto'). This mix pulls the original wind and symphony theme into the Celtic realm without a hitch. What was particularly impressive is how the song starts out soft as it did in the OST, then picks up to become upbeat and fun, including an accordian . Ingenious arrangement.
Parasite Eve Remix - Across the Memories
This CD blows for the most part, but the catch song, "AYA", and this one, "Across the Memories", caught my attention immediately. It's very house and seemingly mediocre, but it does one thing I've never heard a remix do. Most remixes are either one song or a medley of songs, but at several points in this mix you'll hear several songs playing at the same time integrated well enough to distinguish them without being annoying.
Legend of Zelda: Ocarina of Time Arranged - Last Battle
This mix features the same ominous, yet hopeful feel that the original had, but takes both emotions to a completely new level with added percussion and strings, with a few horns to boot. If this song had played during the battle with Ganon, I might have lost from sitting there listening to the music instead of playing the game.

I seem to have forgotten some. Fortunately some people have reminded me of them.
Xenogears CREID - Merkaba, Dazil, Balto, Lahan
Zerovus!? Lavomus!? - Simply incredible. I have it burned on a CD because it was soooo good. A very powerful combination of FFIV - Final Battle and CT - Lavos' Core.
